today i canned beans

dried pinto and pinks. i have spoiled my family. when i had my heart failure 8 years ago, i started canning my own because they didn't have salt-free ones at the time. mine are 100 times better than the store bought ones and since we just used up the last bottle, i spent the day canning. i now have 18 pints and 8 quarts. and i'm actually itching to do some more. it takes a good day's worth of time and my house stinks like beans. but today i scheduled well, got my exercise in, the beans canned, a piano lesson, an hour long phone visit with my wonderful little brother, another visit with heather, and dinner made. all in one day.

dinner was good, chicken breasts with a lemon thyme sauce and risotto. a green salad to top it off.

i'm feeling mighty resourceful today.
